I am assuming this question is asked not to actually find that awesome idea but it is to gauge the approach a candidate might take.
So I would go ahead with defining the problem statement like this - "Given today's scenario, What would be the idea you will propose I were to write the blank cheque"
Problem statement: what is an idea which can give you max profitability given today's environment.
Break down 1
Business = Profitability aspect from Market AND Profitability aspect from Competition

Market = High demand AND High growth
Competition = Less Competition AND High Entrance bar AND Easy Exits

Hypothesis - Due to COVID, consumers have a high demand of vaccine and no company yet has been able to come up yet.
lets see whether our hypothesis got validated through the model or nor
Validation of Hypothesis
Market = High demand AND High growth
As of now, market demand is of approximately 1.2B COVID vaccines and increasing as people are getting more and more infectious so the market is also growing at a very very high rate for the COVID vaccine.
Competition = Less Competition AND High Entrance bar AND Easy Exits
As of now, no company has come up with any medicine or vaccine so virtually there is no competition yet.
Easy exits - If we succeed in developing the COVID vaccine then we can patent it and in the first phase, we can earn high profits, later we can earn loyalty.
Potential Challenges -
1. Production Challenge - If we could invent the vaccine, due to high demand we may face in production vaccine in high volume at a very short span of time.
- However, we can go for outsourcing companies like Serum technology based out of Mumbai India, which produces that 60% of all world's vaccine.
2. Political challenge - Our production and profits may be influenced by the government rules and regulations.
-- We need to come up with a strategy on how to circumvent the challenges without violating the law of the land while making a sustainable business.
